Peanut chicken with tomato rice

Another tasty dish inspired by a recipe in the ‘Quick Roasting Tin’ book.

Cooking time: 30 minutes
Difficulty: Easy

Ingredients

  • 140g basmati rice
  • 150g cherry tomatoes
  • 400ml chicken stock
  • Stir fry vegetables
  • 3 tbsp crunchy peanut butter
  • 1 tbsp sesame oil
  • 1 tbsp dark soy sauce
  • 1 lime, juice of
  • 4 chicken thighs

For the dressing:

  • 1/2 tbsp dark soy sauce
  • 1 tbsp lime juice
  • 1 tbsp sesame oil

Method:

– Preheat oven to 210 deg.
– Add the rice, tomatoes, stir fry veg and stock to a roasting dish.
– Mix the peanut butter, sesame oil, lime juice and soy sauce together.
– Place the chicken on top of the rice and pour over the sauce.
– Cover with a lid and cook for 30 minutes.
– Remove from the oven.
– Mix the dressing ingredients together and pour over the rice dish and mix.

Serve!
